I did my brussel sprouts with streaky smoked bacon. I par boiled them until just about soft and then popped them in a frying pan with a a few cubes of butter and 4 rashers of streaky bacon. Tastes great and a nice alternative just boiled sprouts.
I peeled and sliced these lengthways and parboiled them. I then popped them in a roasting dish and drizzled them with honey and roasted until sticky and crispy. Gorgeous.
